I'm not a fan of coconut. The hubster on the other hand is slightly in love with it. One of his favourites is coconut shrimp so I decided to hook him up tonight for dinner. They turned out pretty good! I will for sure be using this recipe again. It will be great for an app when friends come over.
Ingredients
20 ish raw, peeled shrimp (tail on or off)
1/2 cup Japanese bread crumbs (do NOT use regular bread crumbs)
1/2 cup shredded coconut
2 eggs, beaten
1/4 teaspoon Cayenne pepper
pinch garlic powder
Method
Preheat oven to 425 degrees. Thaw out shrimp. Mix Japanese bread crumbs, coconut, Cayenne pepper and garlic powder. In a separate bowl beat two eggs. Using tongs dip shrimp in egg then into bread crumb mixture to coat. Place coated shrimp on parchment lined cookie sheet. Bake for 12 minutes, turning once half way through. Serve with a a Thai chili dipping sauce. YUMMMMY!
