Last week I took a small container of my homemade pesto (found here) out of the freezer with every intention of making pasta but completely forgot. Tonight I was cooking up half chickens and decided to spread pesto all over the chicken before baking. It turned out fantastic. Baked Chicken
2 half chickens (enough for 4 servings)
1-2 tablespoons pesto
Paint pesto over chicken and bake at 400 degrees for at least 35 minutes, or until juices run clear. Serve with a veggie side (I did roasted asparagus with melted provolone cheese)
